I guess summer is coming to an end.
Can’t change it, whether I like it or not.
Soon there won’t be as much fresh, ripe, locally-grown fruit available.
But I sure won’t let that deter me from some healthy habits I have gotten into – like having a vitamin boosting smoothie on an almost daily basis (usually for breakfast or lunch).
It’s just a matter of working with what is there. Like the carrot-mango-apple combination of this smoothie. We have carrots and apples available pretty much year round. And for the mango part I am using conveniently frozen mango chunks. I like some chill-factor to my smoothies anyway.
To pack some protein into this smoothie there also are Greek yogurt and chia seeds in there. Latter are also a great source of fiber, omega-3 fatty acids, calcium and manganese*.

Get an energizing vitamin boost with this Carrot Mango Apple Smoothie. Greek yogurt and chia seeds are involved as well!
Ingredients
- 3/4 cup carrot cubes, about 1 medium carrot
- 3/4 cup mango chunks, fresh or frozen
- 1 apple, Granny Smith
- 1/2 cup Greek yogurt
- 1/2 cup milk (any kind)
- 1 tbsp chia seeds
- sweetener to taste (I use 1 tbsp raw honey)
Directions
- Blend all ingredients together in a food processor or blender until combined and smooth.
- Add more milk for thinner consistency.
